我最喜歡吃creme brulee時用小匙「卜」一聲敲開脆糖的一刻,因為脆糖底下是又香又滑的布甸,是百吃不厭的好味道。

要做到這種誘人的效果,雞蛋布甸要雪得冰凍,脆糖更要即燒即食,千萬不要預先燒好,否則脆糖回潮就不好吃了。
